Each release from Enlightenment wines is in some way unique. While they experiment with new botanicals and flavor profiles in limited releases, even their “simplest” 100% honey wines are a new wine every release, distinct flavors the product of which flowers and plants the bees made honey from, the season, the weather. Here there are 4 ingredients: well water, honey, foraged dandelion flowers, and orange peels, which ferment dry to 15% abv. The nose is frankly green, somewhere between salad bowl and damp forest floor, and underneath is that pollen-bright, dandelion aroma that can only be said to smell of yellow. A mead of remarkable complexity, the palate is tart and dry, herbal and floral. The honey flavors move through it, but play a more supporting role to the dandelion, which sits full-center: familiar, happy.
